This past weekend, I went to Boon Burger, again..hands down still THE BEST vegan burger I’ve ever tasted. Everything from the patty to the sauce and gluten free bun created an explosion of perfectness in my mouth.

I got the bacun cheeze burger with fries and a lemonade. They season their fries with sesame seeds, something I’ve never had before and I don’t know why – it was so delicious.

The homemade coconut milk based ice cream comes in a cone, cup & milkshake. The texture, taste and consistency is better than any non vegan ice cream.

Vegan Vacation

My husband and I just got back from one of our favourite vacations yet! It’s a new resort that just opened up in Cayo Coco Cuba. The resort is called the Pullman, and is the first partially (or half, I can’t remember) owned Cuban resort by a Canadian. The food is to DIE for – plenty of Vegan options for me & Vegetarian options for my husband (he eats chicken from time to time).

I was a tad nervous going on vacation as a Vegan for a few reasons, mainly because I had got it in my head that theres NO WAY I can live for 10 days without my smoothies, Vegan ‘meat’ and plant based food.

I must say, I was pleasantly surprised at the amount of food that was available for me here. There were plenty of salads, stir frys, fruits and veggies to sustain me for the duration of our trip. Mind you, like here you can modify your food to fit a Vegan plant-based diet, BUT let me warm you they DO NOT understand why someone would be Vegan (from my own experience I think they find it disrespectful as they eat to survive, they don’t understand why you would cut out certain foods) but such is life and I’m still alive and well.

I wanted to share a few pictures from my vacation & some tips and tricks that I think would help being a Vegan on vacation.

Two beautiful pictures that don’t do the beach justice. The white sand is so soft and the water is always warm! If you’ve been to Varadero, the beaches aren’t as nice in the sense of completely white sand and calm bath like ocean but still nothing like we have here in Canada.

After many 5am wake ups, countless walks on the beach and 3 catamaran rides my husband finally caught the fish he planned so diligently for since we booked the vacation back in January.

Tips for a Vegan vacation.

  1. Pack some snacks to bring with you to the airport
  2. Pack a meal (if you need too) that you can bring on the plane with you
  3. Pack some protein powder or supplements that you take
  4. Pack any condiments or seasoning that you usually use at home to cook with
  5. Learn about local ingredients that are used wherever you’re travelling too
  6. Find local Vegan restaurants (if any)
  7. Research on Pinterest / Google for any bloggers or other Vegan travellers that have been to the area that you’re going
  8. Notify your accommodation that you’re vegan
  9. Find apartments or places to stat with kitchens (Airbnb)
  10. Pack you’re cruelty-free cosmetics in case they’re hard to find

15-minute creamy avocado pasta

it was recently my birthday and one gift i received was a book i always had my eye on – the oh she glows cookbook by angela liddon. this beautiful 313 paged book is full of delicious vegan goodies from breakfast to dessert. tonight, my husband (who is the chef in this  ouhousehold) is actually letting me into the kitchen to attempt what most people would say is a quick and easy dinner..for me, not so much. wish me luck!

oh she glows – 15 minute creamy avocado pasta 

Serves 3 

PREP TIME: 5 to 10 minutes . COOK TIME: 8 to 10 minutes 

9 ounces (255g) uncooked pasta

1 to 2 cloves garlic

1/4 cup (60mL) fresh basil leaves

4 to 6 teaspoons (20 to 30 mL) extra-virgin olive oil

1 ripe medium avocado, pitted

1/4 to 1/2 teaspsoon (1 to 2 mL) fine-grain sea salt

freshly ground black pepper

lemon zest, for serving

  1. bring a large bowl of water to a boil. cook the pasta according to the instructions on the package
  2. while pasta is cooking, make the sauce. in a food processor, combine the garlic and basil and pulse to mince.
  3. add the lemon juice, oil, avocado and 1 tablespoon (15mL) of water and process until smooth.
  4. drain the pasta and place is back in the pot. add avocado sauce and stir until combined. you can gently rewarm the pasta with the sauce.

i ended up making ours with zucchini instead of pasta. you can also use gluten free pasta for something not so heavy in the carb department.
